Position Summary: The Executive Chef is responsible for all culinary activities for the restaurant. Reporting to the President of Santa Fe Dining, will oversee all activity in the kitchen to include recruiting, hiring, and training personnel, scheduling of staff and managing labor costs to meet budge requirements. Plans menus in conjunction with request of the President of Santa Fe Dining, Inc., oversees product purchasing and manages the culinary budget.
Compensation: Exempt, salaried with a potential for performance related additional compensation.
Essential Functions & Responsibilities:
- Absolute commitment to excellence in food preparation and presentation.
- Ensure that the kitchen meets statutory and company requirements for health and safety.
- Ensure that all standards of food preparation and service are established and achieved in line with the budget
- Ability to work all stations as volume dictates.
- Superior employee relations with the ability to build and maintain a positive work environment founded on teamwork and customer focus.
- Consistently looks at ways to maximize income through effective purchasing via nominated suppliers and creative merchandising.
- Orders all necessary food, dry goods and equipment, obtains best buys in line with directives.
- Maintains strong relationships with vendors and suppliers.
- Takes inventory on a weekly basis and evaluate the cost of sales reports from the General Manager
- Maintains a catalog of detailed written recipes, prep lists, and order guides.
- Communicates with all management and staff regarding kitchen related topics.
- Attend quarterly Culinary Team meetings.
- Remains up-to-date on industry trends.
Qualifications & Characteristics:
- Impeccable integrity, honesty and trustworthiness.
- Proficiency in the following restaurant functions: food planning, preparation and execution, purchasing, sanitation, security, company policies and procedures, personnel management and recordkeeping.
- Excellent listening and communication skills, including the skills necessary to deal tactfully and professionally with guests, employees, management and vendors.
- Advanced food and beverage knowledge and the willingness for further education.
- Computer proficiency and technical aptitude with the ability to use a POS system and Microsoft Office products including Word, Excel and Outlook and Isolved recruitment platform.
- Must have, and maintain, a New Mexico Food Handlers Certification.
- Strong organizational and time management skills.
- Ability to collaborate with the executive team and President of Santa Fe Dining, Inc. on menu creation and execution.
Working Conditions
- The Executive Chef position requires flexible availability to accommodate working in accordance with the needs of the restaurant. Candidates for this position must be able to work days, evenings, weekends and holidays. A typical work week may consist of 45 hours or more or 50 hours or more during peak season from May to October.
